UPSIDE DOWN APPLE AND HONEY CAKE

Apple Topping
Third cup brown sugar
1-2 large peeled apples, cored and sliced
Sprinkle sugar on bottom and sides of 26cm spring form pan
Well greased and lined
Arrange slices in one layer
The Cake
3 large eggs
¾ cup dark brown sugar
¾ cup oil
¾ cup honey
¾ cup warm apple juice
2 and a third cups plain flour sifted with
1 teasp baking powder
1 teasp bicarb soda
1 teasp cinnamon
1 teasp cloves
Beat eggs and sugar until light and fluffy
Add oil, honey and apple juice and beat until smooth
Fold in dry ingredients
Pour over apples
Bake for 55-60 minutes at 180 degrees or until a cake tester comes out dry
Cool in pan for 15 to 20 minutes then invert on to a plate
