MOTHER DEAR’S HONEY CAKE (Jaelle Thompson)

3 eggs

1 cup of sugar

2 tbs oil

1 ½ cups S.R. flour

1 cup plain flour

1 tsp baking powder

½ tsp salt

½ tsp ginger

¼ tsp nutmeg

1 tsp cinnamon & mixed spice

Dash of cloves

1 cup honey

1 cup warm strong coffee

½ cup chopped walnuts

2 tbs rum or brandy or more to taste!!


Method

Beat eggs with sugar. Add olive oil. Sift measured flour, baking powder and spices then stir

into egg mixture alternately with the warm coffee, brandy and honey until it is a smooth

batter. Stir in chopped nuts.

Line a 24cm pan with baking paper and pour in mixture. Bake the cake in a pre-heated 180

degree oven for 1hr or 1 ¼ hour until firm and brown on top. Sprinkle with icing sugar to

serve.
