MIRIAM’S APPLE CAKE

3 ½ cups self raising flour
1 ¾ cups sugar
1 teasp salt
4 eggs
1 cup oil
¼ cup juice
1 ½ tablesp vanilla
4 large baking apples peeled and sliced
Prepare filling (apples) and set aside until cake mixed
Sift flour, sugar, salt in bowl.
Make a well in the center and pour in remaining ingredients
Mix well. Spoon a little over one half of the batter into a baking pan
Cover with apple mixture. Apples should not touch sides of pan.
Cover with remaining batter.
Bake approx. 75 minutes at 350 degrees in a 9”x13” pan.
