MAYA ZETLIN’S HONEY CAKE

4 eggs
1 cup brown sugar
1 cup oil
1 cup triple strength black coffee at room temp
1 cup honey
21/2 cups self raising flour sifted with 1 teasp allspice
and 1 teasp cinnamon
Beat eggs, sugar and oil well.
Add honey and coffee
Fold in dry ingredients
Bake for 60-75 minutes at 170 degrees
Fluted tin is ideal but you need a reasonable sized pan
The mixture is runny
Sometimes I add a pureed peeled apple just adds a little freshness
It can be made in a food processor
